2 bags of Freddo chocolate chips (either MILK 800 g or DARK 720 g) Note – a small fondue machine will require at least 2 bags in order for chocolate to circulate properly
1/4 cup canola or vegetable oil per bag of chocolate chips.

Place chocolate chips in top portion of double boiler. Put enough water in bottom portion of double boiler so that top portion touches water once placed on top.

Bring water to a light boil on medium heat. Place top portion containing chocolate on top. Stir chocolate continuously until completely melted. Do not over cook chocolate as it will become hard and grainy.

Once chocolate has melted, pour 1/4 cup canola or vegetable oil into the melted chocolate and stir in order to blend well. Pour chocolate/oil mixture into machine, slowly, small portion at a time. Repeat this procedure with second bag. If chocolate appears too thick, add just a little more oil to second batch of melted chocolate. The oil will facilitate circulation of chocolate in your machine.

If desired, the following can be added to your fondues:

  • a few drops of vanilla;
  • orange or coffee liqueur (for adults);

Have a selection of dippers, such as banana or mango slices, strawberries, orange or pear wedges. Italian biscotti or white angel cake cut into squares are also good. Marshmallows too!

Other dipper/coating ideas:
After having dipped fruit in chocolate, dip into bowls filled with:

  • sugar cake decorations;
  • dried fruit;
  • dried coconut flakes;
  • dried rice cereal;

Use plastic spoons for kids!




CARAMEL AND CHOCOLATE POPCORN

  • 1 ¼ cups sugar
  • ¼ cups corn syrup (white)
  • 3 tbsp water
  • 3 tbsp butter (salted)
  • 8 cups unflavoured popcorn
  • 4 oz (110g) milk chocolate

Note – you can replace milk chocolate
with dark or white chocolate

Method :
  • Line cookie sheet with waxed paper
  • In small pan, bring sugar, corn syrup and water to a boil. Cook without stirring until mixture turns gold colour. Remove from heat. Add butter and mix until melted. Pour over popcorn and mix/stir until popcorn is well coated.
  • In small pan over cooktop or in microwave, melt
    chocolate 1 to 2 mins.
  • Drizzle chocolate over popcorn.
  • Let stand until completely cooled.

once completely cooled, put some into some fun bags
or containers for a delightfully great tasting gift !

  • Place content of a 100g bag (or approximately 100g chocolate chips) in bow.
  • Microwave for only about 15 to 20 seconds only.
  • Stir chocolate till melted.
  • If not totally melted, you can microwave for a few seconds more.
  • Pour into small fondue bowl.
  • A few drops of vanilla extract may be added (or your favourite orange or coffe liqueur) for extra flavor.

DIPPER IDEAS
Banana, strawberries, orange wedges, mango slices, Italian biscotti or marshmallows too! Kids will then enjoy coating their piece in bowls filled with dried fruit, shredded coconut, sugar cake decorations or a rice cereal.





BROWNIES RECIPE

  • 5 tbsp unsalted butter
  • 6 oz chocolate (milk or dark)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp coffee
    (instant or expresso)
  • 1/4 tsp salt (optional)
  • 1/3 cup all-purpose flour
  • Preheat oven to 325°F.
  • Grease 8 inch baking pan.
  • Put butter and chocolate in a heatproof bowl over saucepan simmering with water.
  • Melt it all down until well blended, stirring frequently.
  • Remove from heat. With whisk, stir in sugar (mixture will become grainy).
  • Whisk in eggs, one at a time and blend in well. Add vanilla, salt, coffee and flour and stir only till mixture is incorporated, no more (If no allergies in family/friends, you can add, at this stage, 1 cup walnuts, folding in with rubber spatula).
  • Pour into pan and bake approximately 30 minutes. Cool and cut into squares of desired size.
